Generally, the shelf life of tea is two or three years. The expired tea, even been well-stored, will lose all the fragrance. However, white tea is different. It is the natural making process that makes white tea the aged the better, not only becomes more and more mellow and fragrant, but also has high medicinal value. Therefore, there is a saying about aged white tea: “one-year tea, three-year medicine, seven-year treasure”, meanwhile, the aged white tea are favored and collected by more and more tea lovers.
This Organic White Peony Tea was harvested and made in 2014. Its original material has passed the organic testing of EU, USDA and JAS. After several years of transformation, the tea leaves are gradually turning red with aged fragrance, the tea liquid is clear and bright with a hint sweetness of the red dates, and the taste is mellow, thick, without any grassy taste. Moreover, it can brew for many steeps; the more steeps the sweeter taste.

Heshan Organic Tea Garden, which is the main producing area of famous white tea in Fuding, is located in the west of Taimu Mountain with elevation between 600-900 metres. The weather here is warm and humid, with abundant rainfall. The tea plantation is surrounded by fog which creates the perfect conditions for tea bushes, resulting in a rich array of micro-minerals and organic nutrients accumulating in the tea leaves. The tea plants growing here are mainly of the Fuding Dahao and Fuding Dabai varieties.
Mr. Lin, who was born in Fuding in Fujian Province, grew up surrounded by tea. His father, grandfather, and great-grandfather were all tea farmers. When he was in elementary school, he helped pick tea after school during the tea-picking season when there were not enough people to help with the harvesting. That’s when his dream of entering the tea business was born. Mr Lin says: “My original idea was simply to make a good life for my family through my tea-growing business. But in 1993, when my tea business had gradually developed, I changed my mind. I want to create a long-term Organic Tea business.” Talking to Mr Lin, our impression was of a man with a very frank manner who speaks quickly, walks quickly and works quickly.
It would not be an exaggeration to say that Lin Jian is the founding father of Chinese white tea in the modern day. He owns nearly 2800 acres of high-grade tea gardens in Fuding, including 500 acre organic tea garden - the first organic tea garden in Fujian that has earned organic certification in the USA, Europe and Japan. He also owns a 200 acre jasmine tea garden in Guangxi Province.
In 2008, his Silver Needle White Tea won the gold medal at the annual Chinese White Tea festival in Beijing.
This Bai Mudan Tea is produced in Mt. Taimu area in Fuding which is a famous tea-producing area located in the northeast of Fujian Province. Fuding belongs to the subtropical monsoon climate, characteristic of coastal areas. The average annual sunshine lasts 1840 hours; the average annual temperature is 18.5°C and the average annual precipitation is 1661.6 mm. This tropical mountainous coastal area is perfect for growing Pekoe. It has abundant rainfall and temperatures that are neither too hot in summer nor too cold in winter. The mountains around the farms are more than 80% forested, ensuring the soil has a high natural fertility and organic content, removing the need to use fertilizers.
This White Tea is made from the leaves of the Fuding Dahao tea plant, also called “Dahao” for short. It propagates asexually and is shaped like a small tree. In 1985 it was certified as a national tea plant variety with the number GS13002-1985. It can grow up to 2.8 m high and has an obvious trunk. Spring tea, which contains 1.8% amino acid and 28.2% tea polyphenols, is a high-quality tea used to make Silver Needle White Tea and White Peony Tea.
Following exactly the same processing method and using the same plants as Silver Needle White Tea, with the only difference being which parts of the tea plant is used, the history of Bai MuDan and Silver Needle white teas is very similar.
White Tea is the earliest form of Chinese tea. Farmers found out that cooling, sun-drying or baking the leaves ensured that the tea could be easily stored and used at a later time. These steps, of course, formed the basis of the withering and drying processes that are still used to this day.
The Bai MuDan version of white tea – essentially the same as Silver Needle except for the inclusion of one or two new leaves with the tea bud – was first produced in the early 1870's by people in the area around ShuiJi, in Zhenghe county Fujian province. Later on, in the 1960's, production spread to Songxi county in Fujian. Nowadays, the main areas for the production of Bai MuDan are in Songxi, Zhenghe, Fuding and Jianyang counties.

I ordered this Teavivre tea from Amazon. I am still relatively new to drinking straight loose-leaf teas, and I admit that I don't scrutinize them that much when rating them because I just don't have a lot to compare them to right now. If I like it and would order it again, I'll give it 5 stars. Take that for what it's worth. Having said that, I must say that I was taken by surprise by this tea. It was unique compared to other teas I have tried, both in taste and in viscosity. It was vegetal and floral, with a thickness to it that I had not experienced before when drinking tea. I have heard teas described as "thick" before, but this is the first tea I have ever had with which I experienced that thickness myself. I could even see the "legs" (to borrow a wine drinkers term) of this tea on the side of the glass vessel I brewed in. I enjoyed this tea and will buy it again.
