When brewing Green Tea Powder, the scale of tea powder to water is 1:80. In order to protect the nutrition in the tea, it’s better to be brewed at the temperature between 60℃ to 80℃. Usually, brewing Green Tea Powder, or Matcha, needs a Chasen (tea whisk, 茶筅 in chinese) to stir the tea liquid to bring out a unique flavor. The rich flavor of Green Tea Powder is given by the abundant amount of chlorophyll and amino acid in the tea.
Early in Tang Dynasty (618–907), Chinese people invented the steamed green tea – known as 碾茶 (niǎn chá: green tea leaves crushed into small pieces). It is the forefather of matcha – the Japanese tea we known today that is milled into powder from Niancha. See also: the most renowned tea reviewer in Song Dynasty, also a great writer, Cai Xiang (蔡襄), wrote about tea contrast in his work The Record of Tea: press the tuancha cake into small pieces, then grind it; use a sieve to separate out powders, and then brew the tea powders with boiling water. Good tea has fine aroma and taste. As the custom of drinking tea was changing, in Ming and Qing Dynasty, the way of brewing tea was much similar to the modern ways. Niancha disappeared in tea’s history.
Nowadays, Green Tea Powder is made in this process: steam fixation – rolling – drying – milling.
During the steam fixation, the number of some oxide starts to increase, like the flavonol and ester. The component ionone is produced. They form the unique aroma and taste. Thus steam fixation can bring the Green Tea Powder a special flavor and light green color, different from normal green teas.
The fresh tea leaves of making Green Tea Powder is from the Jiukeng tea trees. It is also known as Jiukeng large leaf species, seeding family, bush, mainly distributes in Chun’an, Kaihua in Zhejiang Province and Shexian in Anhui Province. In 1985 it was verified as a national specie of number GS13023-1985 by the National Crop Variety Certification Committee. The spring tea has one bud and two leaves, and contains about 3.4% of amino acid, 20.9% of tea polyphenols, 13.3% of catechin and 4.1% of caffeine, which is suitable for making green tea. The dry tea is green bloom, with strong aroma and heavy flavor.
Good environment can provide good tea. Our Organic Green Tea Powder comes from Tianmu Mountain (Eyes on Heaven Mountain), located in Lin’an, northwest in Zhejiang Province, a distance of 84 kilometers away from Hangzhou. Tianmu in Chinese means the eyes on heaven. There is a pool on each top of east peak (elevation of 1480 meters) and west peak (elevation of 1506 meters) of Tianmu Mountain. The two pools look like the eyes that are watching the sky. This is how it was named.

Lin’an is in the northwest of Zhejiang Province. The Tianmu Mountain in Lin’an covers 4284 acres, ranges from E 119°24′11″ to E 119°28 ′21″, N 30°18′30″ to N 30°24′55″, with elevation of 300 m to 1556 m, and a typical forest ecosystem and landscape of middle subtropical regions. As the mountain lies on the north edge of middle subtropical region, meanwhile is affected by its particular structure, the climate here is cool in summer and warm in winter. The average temperature is 14 ℃. The major soil is the widely spread red soil. All of these conditions make a best environment for planting organic tea trees.

I bought this with the Black Friday sale last year for fairly cheap. Seems tasty enough to me! I poured some in the bottom of the mug and then waited about 40 minutes for the water to cool after boiling (around 175 degrees) then poured the water in the mug while stirring. A little goes a long way to the point where I used the remnants of the powder in the bottom of the mug for a second cup. Even much hotter water the second cup didn't seem to have much of an impact on the powder flavor which was surprising to me. I thought the hot water would ruin the flavor. The flavor is fairly strong but I like it -- I probably used way too much powder. It's a refreshing cup -- such a lovely bright green cup! I like that I can get a decent green tea powder for this price. It does the job!
Flavour wasn't very good but the effect health wise was excellent, i pretty much had great energy all day I expected the tea to taste like matcha green tea. The flavour was not a matcha but I like it.
I have waited this moment for long, my fist powder/grinded tea. Tea powder is so fine that I had difficulties opening the package, I had to be really careful so I won’t cover everything around me with tea, it’s pretty messy. I dried tasting dry tea, it was bitter and tasted like cut grass. Really green and nice color. I used about 1/4 teaspoon for my 2dl cup, I don’t know if it’s right amount but it’s fun to find out yourself what is best amount for your tastes. I used milk frother to blend my tea since I don’t have japanese chasen whisk, it did its job pretty well. Taste reminds me a lot of Japanese green teas (bancha maybe). It still tastes like cut grass but there is no bitterness there is also some kind of ‘sealike’ flavour, maybe seaweed, there is quite many layers of different flavours. I also tried it with honey but I rather drink it without. Cacao powder might be interesting to try with this, also lemon might do. Next time I will use more powder. I might buy more when this batch ends, I really liked that. I also give plus for organic as usual.
If you like the taste of seaweed you will love the taste of this tea powder.
This tea smells grassy but once you mix and brew it, the grassy smell mostly goes away. The flavor is very mild with a very slight sweet taste to it. It has a very slight grassy aftertaste but it's hardly noticeable. It tastes good and is an excellent pick-me-up morning or afternoon beverage as it will help wake you up but without the jitters of coffee because of an amino acid called L-theanine.
I drink this tea in the morning, it's very potent and I noticed I'm more relaxed and focused throughout the day. I don't mind the taste, but it is strong. Overall, great tea everyone should try.
