Matcha is made from Green Tea which is typically shade-grown and harvested in May, and the stems and veins are removed in processing. Then the tea buds and leaves are lightly steamed to prevent fermentation, thus developing the bright green color of the young tea leaves and sweet, vegetal flavor. This process inhibits the leaves from receiving vital nutrients and as a result, more chlorophyll is produced. You will get the sweet, vegetal smell to it; this comes from the amino acid called L-Theanine, again produced by the shade growing process. It is the L-Theanine which gives matcha nice, clean-drinking and green tea taste. The very top should have developing leaves that are soft and supple. This gives a finer texture to higher grades of matcha.
Use 2g Matcha powder and 60-70 ml water of 60℃ to 80℃
When brewing Matcha, you need to use a Chasen (tea whisk, 茶筅 in chinese) to stir the tea liquid to bring out rich bubble and fresh flavor.
The Jinshan Organic Tea Garden is specially managed; tea plants for matcha are shade-grown for about twenty five days before harvest. This is to avoid most of the ultraviolet ray in order to compound more chlorophyll and amino acid; as well as keep tender tea buds and leaves. Organic growing here to avoid using any pesticides or chemical to ensure the teas is absolutely natural and healthy.
Wuyuan is a county of hilly and mountainous area with humid climate which locates in the northeastern part of Jiangxi Province. The surrounding mountains, misty climate and the fertile soil make it great environment. Tea farmers in Wuyuan always follow ancestors organic growing ways of not using pesticides and chemical so that the teas are all natural, resulting in most healthy beverage.
Matcha is made from tea leaves from fine tea bush Soubei, Zhaori, and Zhaolu which are clone preparative variety. The leaves from these tea bushes are tender and best for producing Matcha. With the late plucking time to prolong the growing period the tea leaves, thus reducing the bitterness taste. Matcha made from theses variety must have characteristics of vibrantly Green in color, fresh and sweet taste, and smooth finish.

First off I want to state that I am not a matcha expert. I've only had it a few times, but this matcha makes me feel amazing. It gives a caffeine boost, but also more clarity and calmness that I have NEVER gotten from coffee. It seems like pretty good quality to me. I will definitely be ordering more on my next order.
I have enjoyed green tea for many years and thought it was about time I tried Matcha. As this was an addition to my usual order I did not know what to expect. What I got was another lovely option to the teas I already love. Initially I was not sure, but on my second cup I released it was superb. As I only wanted to try this tea I did not bothered with any of the accessories. I make it with the recommended amount and find that by the time the tea is ready to drink the excess powder has fallen to the bottom of the cup and I can happily drink the rest. If you like your green tea definitely one to try but make sure you try it a few times as initially it is a bit different. A great option.
It's amazing tea, I had tasted different matcha tea and this is amazing, excellent flavour.
I am new to Matcha, so I don't even know if I prepared this properly, especially considering that I used what I have at home, and not real equipment needed. Soup looks, tastes and smells like peas cream soup. Taste is fine, and it has some good, long lasting, sweet aftertaste. Still, it will take some time to get used to this tea.
Reply: Our supplier haven't sent this Matcha to test quality rating. It's a 1000 mu Organic tea, which is high grade and healthy tea.
Reply: The tea have many nutrient content, include the Vitamins, Minerals and Amino acids, of course, it still have low caffeine. It does not rely mainly on caffeine like coffee. That's why the tea have low caffeine, but it still have enough energy.
