In spring, the daytime is getting longer. The nutrition accumulated in the tea tree starts to sprout with spring buds. Plenty of amino acid and pectin are produced, while the amount of tea polyphenol is small. Thick leaf makes brisk and mellow tea liquid, with gentle fragrance and strong sweet aftertaste. Spring tea’s taste is the best among the four season’s teas.
This is called as 春水(chūn shuǐ: means tea liquid of spring tea).

Autumn Aroma

When summer is ending, tea tree’s growth will slow down. Meanwhile, at the time the temperature between day and night is distinctive, tea leaf will lose water due to stronger transpiration and slow growth. Thus the leaf becomes thinner with less water but more fragrant substances. The tea liquid can therefore have higher aroma.
This is known as 秋香 (qiū xiāng: is the high aroma of autumn tea)
